Assessing commodity products of carp and common silurus

Increased level of intensifying the pond fish breeding has significantly increased the interest to new high productive and well adjusted to the industry technology fish breeds, which possess insignificant cover and low-fat. The article gives a short account of literature data and own examinations on the quality of commodity products of the carp and common silurus. The results present rather wide picture of depending the commodity quality of fishes on the age, sex, feeding and origin. Selecting the producers by the ALT stipulates the high level of the albumen growth and the reduction of bones between muscles for 20.30 %.
