Abstract

The physical and chemical characteristics and amino acid composition and their changes of the pomegranate new varieties were researched. It is shown that the pomegranate juice and rind are rich in organic acids, ascorbic acid, essential amino acids and other bio-effecting agents. The amino acid composition is better stored in a controlled atmosphere.
