The article explains the prospects of traditional products using in the population dietary which enriched with essential ingredients, bioactive substances and metabolites-antioxidants of vegetable crops, including amaranth leaves and seeds which is introduced into RRISOK from 1990. The amaranth seeds and leaves are multifunctional raw material, which processed products (protein concentrate, flour, amaranth oil, biologically active supplement to food, herbal tea “Amaranth”, concentrates for soft drinks, etc.) are natural functional additives to the traditional bakery and confectionery products, meat and dairy products, soft drinks to correct the biochemical composition enriching them with deficient with essential micronutrients.Downloads
