Abstract

It substantiates the suitability of the winter-hardy apple varieties from Southern Baikal region for the juices production. When selecting varieties for research were introduced factors such as the dispersal in the orchards, productivity, disease and pest resistance. Highly degustation evaluation are received juices from apple varieties Ranetka, Ermolaeva and Krasnoyarskiy snegirek, low - Malinka. It is found that the juice extraction is does not depend on the fruit size and determined by the seed doles, size of seed capsule, skin thickness. The physical and chemical indicators of juices were analyzed.
