Abstract

Extracts were obtained from foliar biomass of vegetable plants Amaranthaceae, Brassicaceae and small fruit crops Actinidia polygama and Schisandra chinensis families, investigation of content and composition of series of small molecule metabolites with antioxidative activity was performed. The following metabolites-antioxidants were identified in the derived extracts: ascorbic acid, carotenoids, monosaccharides; total antioxidant capacity was studied as well. Positive correlation between total antioxidant capacity and ascorbic acid was found for the examined vegetable plant varieties. Peak content of ascorbic acid was identified in foliage of Dobryj molodets and Аkkord varieties of the silver vine, with the value reaching 690 mg%. The characteristic of the antioxidants accumulation in leaves of watercress is due to the strong of antioxidants among different parts of the plant.
