Logistics of forming the new technological tenor of the dairy branch

Abstract

Retrospective analysis of one of the most important branches of agricultural production - producing and industrial processing of raw milk - unfortunately, has revealed some problems and unresolved issues. Convergent approach (intertwining) and cognition methodology (understanding) have been applied; there has been an attempt to formulate a possible modernization of the dairy sector of food industry in agribusiness on the principles of the fifth technological mode with relics of the past - bio-nano membrane technologies of clusters of complete production cycle. Nine related separately formed positions (blocks) in the logistics of modern management contain the scientific and practical aspects. At the same time, the forecast for the sixth technological mode has been considered - pikotechnologies to obtain derivatives of milk (lactose hydrolyzates, lactulose, microparticles of proteins, peptides, and amino acid pool). Significant resources of secondary milk protein and carbohydrate raw material (non/low-fat milk, buttermilk, and especially whey) are going to be involved in the technological cycle of production of functional foods for determinate groups of population and feed supplements of new generation.
